Unhulled Hemp Seeds
Hemp is a critical staple in my own kitchen — it is an extremely versatile superfood that makes its way daily into my smoothies, “warm live” soups, and various snacks and other raw foods recipes.
In fact, for me, Hemp seeds, raw Cacao, and Goji berries together comprise a kind of Trio of kitchen basics akin to “milks, eggs, and bread” in most other kitchens.

Nutrient-Dense Nut

Hemp seeds are also an integral part of one of my favorite raw treats, a Vanilla, Macadamia Nut, Hemp Seed Fruit Topping that is just utterly delicious over fresh fruit and topped with fresh almond, pecan, or pumpkin seed milk.
Rich, dark green Hemp Seed Butter is a lovely chlorophyll-rich spread you can use like peanut butter. I find the flavor more delicate than peanuts, and it certainly far surpasses peanut butter in nutrition. Children who are allergic to peanut butter could be given Hemp Seed Butter instead. In fact… forget about the peanut butter full-stop and switch over to Hemp for the whole family. Far better choice all-around.

Additionally, chia is considered highly hydrophilic – meaning the seeds have a unique ability to absorb liquid and form a gel (basic chia gel recipe). This makes chia especially good to use as a thickening agent in recipes like soup, smoothies, or enjoyed as a pudding with a touch of sweetener.
I currently put Chia Seeds in my smoothies, shakes, and sorbets. In addition, because of their ability to “gel” and bind other ingredients, I’m currently experimenting with how to use them to make delicious raw dehydrated cracker and “bread” recipes. They have a far more neutral flavor than flax, which I’m personally not fond of but which is usually the “binder” for raw breads, as eggs are in the cooked world.
I also suspect that because of their neutral flavor, Chia seeds will do Vanilla great service in the future. As a vanilla aficionado, I’m particularly interested in experimenting to see what kind of a raw Vanilla Pudding chia seeds may be able to contribute. Imagine a creamy vanilla treat with the nutritional power of Chia behind it…what a great way to start the day! I imagine kids would go crazy over something like that…while getting a level of nutrition most boxed cereals could never come close to.

Flax Seeds
I do not personally use Flax seeds in my diet, as I don’t care for the way they taste and I use Hemp Seeds primarily for my source of Essential Fatty Acids (EFAs). But Flax seeds are a very common ingredient in raw dehydrated “breads” and crackers, because they are excellent “binders” (in lieu of eggs).
Flax has been around for thousands of years, and has gained popularity as a source of omega-3 EFAs, which are reputed to help lower cholesterol, stabilize blood sugar, lower the risk of various cancers, and reduce inflammation of arthritis and other illnesses.
