Fast. Non-fat, except for whatever macadamia nuts you throw on top. Quick. Made from just a few basic ingredients. Filling. Delicious.

If there are a few raw quick-meals you want to learn, something like this should be in the Top 10.

You can whip this up for a filling breakfast that will definitely last through til lunch, if you have a busy morning planned. You can have this on the table in minutes for a quick dinner if you need to be somewhere soon, or don’t want something that will weight you down.

And it would make a lovely dessert. I would serve this simple dish at a non-raw buffet, that’s how delicious it is. And with all the baked, choco-fatty stuff people bring to those things, imagine the delight that everyone will experience that they can enjoy something lusciously delicious, creamy, and sweet… without guilt.

The creamy sauce is made with bananas and juicy medjool dates, without any fat or nut milk. And if you have a Blendtec or Vitamix, you can cycle it through a few times until it’s warm, turning the dish into some seriously soothing comfort food.

Seriously… good eats.

This is another recipe I so wish I had conceived of earlier in life — makes me think, “Who knew?” What a luscious, satisfying combination, great for a quick breakfast (especially if you’ve made the Vanilla Milk the night before, from either raw pumpkin seeds or raw almonds), but also wonderful for a light supper or a pot luck dessert.

The persimmons have a sweet, custardy delicacy off-set by the crunch of the macadamias, and the Vanilla Milk ties it all together with its creaminess.

And to think it’s loaded with minerals such as zinc from the pumpkin seeds or calcium from the almond, and magnesium from the macadamia nuts, beta carotene and antioxidants and a host of healthifying phytonutrients from the persimmons… It’s all very, very, good.

I love young coconuts, but since I moved this past summer, I haven’t found a local source for them… and have had plenty of other recipes options that I haven’t been motivated to put a request into my local grocer to order a case for me. I’ll get to it… because I surely love them.

But yesterday I was shopping with a dear friend of mine at an organic market near her home (not in my neck of the woods) and we came across some lovely young coconuts! See she picked one up and back at her place I showed her how to whip up a delicious smoothie with it. Wishing right now I had the rest of it to polish off while I write this. Dang, it was yummy. But here’s the recipe for it… made with utterly pedestrian ingredients (except for the young coconut).

Young coconut is a great energizer and replenisher of electrolytes, so excellent either before or after a workout, and wonderful for breakfast, or for a late-day energy kick. A fun fact most people don’t know is that the water in young coconuts was used for transfusions of blood plasma during WWII in the south pacific. It’s bio-identical to human plasma. Gotta love that.

What IS a young coconut?

A young coconut is NOT the hard-shelled brown coconut most of us are familiar seeing in the grocery stores. The shell is actually smaller and more delicate, and is thus cut down to the white fibery protective layer beneath the green husk, in a sort of pyramid shape, and then it’s shrink-wrapped in plastic. The coconut water is sweeter, and the flesh is very delicate, with the texture ranging from firm jello to firm custard to soft cheese, depending on that maturity of the coconut.

There is just so much one can do with that flesh, I could do a different recipe every day and never get exhausted. Whipped cream, puddings & pie fillings, “cheeses”… oh dear me, what a culinary resource young coconut is. But the healthifying aspect of young coconuts is equally as exciting! If you can manage to have one a day, do go for it! There are some excellent resources of quality young coconuts online… if you have the pocketbook for it.

How To Open A Young Coconut

Here are a few resources for how to open young coconuts. Personally, I prefer a sharp meat cleaver. I press the lower edge into the flesh around the top of the coconut, give it a good whack against the countertop or floor, do that a few times around the top, then peel the loosened flap back.

To scoop out the inner flesh, a simple metal spoon scraped against the shell is all that’s required.

(When I use my meat cleaver, I do not lift it away from the coconut. So proceed with the technique above at your risk… and a steady hand!)

This sweet and nutty recipe is just zippy-quick…no need to strain the hemp seeds to make a nice creamy milk. You just whip a few ingredients up in your blender, pour over sliced bananas, sprinkle with cinnamon, and you’re eating. Excellent for on-the-go adults (are any of us NOT “on-the-go”??????) and moms looking for truly healthifying recipes for their children.

Hemp seed milk is a great way to enjoy all the healthful benefits of hemp: the protein, the essential fatty acids (EFAs), the calcium, and all kind of other phytonutrients. It’s one of the most perfect superfoods on the planet, and has a creamy, milky, nutty taste and texture when blended.

Both creamy and tangy, this is mom’s-apple-pie-in-a-glass! And takes just a few minutes to whip up, including the fresh almond milk! Makes for a welcoming breakfast,  refreshing midday snack, or a special treat whilst watching your fave film in the evening.

It’s got all the an-apple-a-day-keeps-the-doctor-away goodness of whole apples, with the rich calcium support of the almond milk. And that almond milk really makes for just lovely skin…

<Hang on… must go refill my glass… ah there, much better! This stuff goes down so enjoyably!>

Honestly, why I haven’t been making this every day, I’m not quite sure. It’s so home-y and comforting without being cloying or heavy. Light and delish. You simply must try… :D

For such an easy recipe, there’s a heckuva lotta mileage one can get out of this little dish.

Made from whipped dried Turkish or Greek figs, it tastes like a rich caramel sauce when paired with apples, and has a wonderfully luscious texture (without the teeth-sticking cloying aspect of caramel, and no added sugar whatsoever). Serve with fresh apple slices for a raw pot luck or family movie-watching snack that is sure to be a hit all-around.

It makes for a succulent spread on raw crackers for breakfast or a snack, and can even be used as a vegetable dip (not all veggie dips have to be savory…). Dollop it in your raw oatmeal or serve in a bowl with warm, fresh almond milk and cinnamon.

Make a nut crust, layer the Figgy Whip on top and add pecans, and you have a quick and easy raw vegan pecan pie. You can also incorporate this as an additional layer in most any raw dessert, with or without chocolate. Use it instead of a “whipped topping” if you have a sweet tooth. 

Spoon onto fresh fruit. Slice up bananas and combine with some of the sauce. Add fresh almond milk, ice, and vanilla bean for an instant vanilla shake. I’m just getting going. I bet I could create an entire chapter in a recipe book just for ways to use this humble little “figgy whip”.

Dried Turkish or Greek figs (my family brought these back from Greece on a recent visit…) are traditionally lined up in a circle and layered with fresh bay leaves into a “cake” of figs. I grew up eating these chewy treats as-is and never heard of or imagined of whipping them up.

But am so glad the idea occurred to me, as I know I’ll enjoy them far more frequently this way. Kids and anyone with a sweet tooth are sure to be able to invent lots of new ways of enjoying them.

This is a seriously versatile recipe you can use many different ways, and it’s a nutritional, energetic powerhouse! Definitely add this to your repertoire, to create delicious quick snacks, a perky no-oil salad dressing, a fruit topping for perhaps any fruit under the sun, or a great dip for both fruit and vedge!

It’s fresh, fluffy, gorgeously orange, tastes not unlike Ginger Fruit Loops, has no added fat, will be a hit with both kids and raw pot luck munchers…and has the combined nutritional power of goji berries (without their raisiny flavor), the potent adaptogen raw maca powder (you will be hard-pressed to taste its strong flavor in this combo…), fresh ginger (great for digestion and a sore tum!), raw honey (anti-inflammatory to soothe the lungs), and fresh lime juice (vitamin C). In other words: Major Zing!

Takes minutes to make. If you’re into superfoods…and even if you’re not… this is a recipe you can make frequently and not get tired of!

Great Recipe For Peaches & Nectarines That Aren’t At Their Best…

After discovering I’d picked up some less-than-stellar nectarines, I figured it was a perfect opportunity to doctor them up in a great raw “milk” shake!

I find both peaches and nectarines to be the most frequently disappointing fruits, with either unripeness or a graininess to the flesh hiding below their gorgeous appearance. So if that ever happens to you, no worries… make a delicious raw smoothie out of them!

And of course, you can use perfectly sweet and juicy-luscious peaches for this recipe too! Just use less raw honey!

Super-Easy, Super-Delicious For A Raw Pot Luck Meal!

The flavor of orange blossom water in this refreshing treat makes it extra cheerful and exotic. Would be an extremely easy addition to a raw pot luck, or a special refreshment if you have company visiting! If you have kids around, make a triple batch…they’re sure to suck these down in no time!

And of course, you could turn this into an adults-only beverage with the use of a little peach, mango, citron, or even vanilla flavored vodka! :D

Marinated Fruit Salad

If you want to jack up the heavenly aroma and alluring flavor, pour a 1 oz. shot of muscat dessert wine over top. The famous Muscato from Samos, which I grew up on (that may explain a few things…heh), has been called “nectar of the gods” for ages, and deservedly so. And it goes beautifully with watermelon.

On Samos, if you take a day-trip on a fishing boat to a neighboring island cove, odds are your breakfast on the boat will be a slice of watermelon and a cup of very light Moscato. Now that’s hospitality I could get used to!

And if you really wanna create something special for you and a lover…turn that 1 oz shot into 4 oz., blend up with ice, and pour out into two martini glasses. Um…make sure those shades are drawn first, ‘k?
