Fresh Mango-Vanilla “Pie” with Vanilla-Walnut “Custard Crust”

Okay, so this isn’t really a “pie” in the sense that there’s a crunchy or flaky crust filled with something… but this is a fresh version you can make on-the-spot, with zero dehydration, and it is all raw, all living… and absolutely scrumptious.
When I made this, I thought I was full and didn’t have room for more food. Buuuut… dang this sure went down easily!
The Vanilla-Walnut “crust” is like a thick, slightly salted pudding, and it offsets the juicy mango bits that have been coated lightly with a Vanilla-Honey glaze. Together… it tastes a bit like fresh mango and vanilla cake batter. I mean… for a vanilla whore like me… really. That’s just nuts.
Make for two for dessert… or just for yourself for breakfast, lunch, or dinner!

Recipe for: Fresh Mango-Vanilla “Pie” with Vanilla-Walnut “Custard Crust”
For the Vanilla Walnut “Custard Crust”
- flesh from 1/2 ripe avocado
- 1/2 cup raw walnuts
- 1 heaping tablespoon raw honey
- 1/4 teaspoon quality natural salt, such as Himalayan Crystal salt
- 1/2 teaspoon quality vanilla
Combine all ingredients in a small food processor, if you have one. You might be able to manage it in your blender, with a lot of scrapeage. Third option: grind the walnuts fine in a blender, then mash everything together by hand! Would be just fine that way.
For the Mango-Vanilla “Pie” Filling
- flesh from 2 mangoes, cut into very fine cubes (see note below)
- 1 teaspoon raw honey
- 1/2 teaspoon quality vanilla
To cut the mango into small cubes, I sliced the mango into two large chunks along each length of the pit, and then sliced each half into a thinner panel. Then I sliced them into long thin strips, and then cubed the strips into small chunks.
Give the raw honey and vanilla a good stir until smooth, then pour over the mango pieces in a bowl and toss with your hands until the mango is covered nicely with the glaze.
To Assemble the “Pie”
Spread the Vanilla-Walnut “custard” into a thin disc. Then mound the mango on top. If you have a bit too much mango to fit on the disc… eat it.
