Amazing Nonfat Vanilla Ice Cream – Made From Sweet Corn & Zucchini!

Since moving from New Jersey to Tampa, I’ve had to enlist a whole new crew of tasters of my recipes. Conveniently, my little nephews are 11 and 14 years old,not in the least “raw”, and thus perfect candidates in my mind for some good recipe feedback.

I loved little 11-yr-old Jayson’s response… “Wow, this is gooooood! There’s corn and zucchini in it?? No kidding!” I mean, you can’t taste either of them, and he got such a kick out of the fact that the ice cream was made almost entirely of vegetables… and yet he wanted more!

There’s no fat added to this Vanilla Ice Cream… no nut milk, no seed milk, no hemp seeds, no avocado. This is straight-up fresh sweet white corn off the cob with baby zucchini, raw (or “raw-ish”) sweetener, and great vanilla.

Who knew that corn and zucchini could be used this way? I surely did not.

Even if you’re not raw, if you need to cut back on fat and dairy, this is a wonderful treat to know how to make! Add some raw cacao and you can easily turn it into a delicious Dark-Chocolate Ice Cream as well!

You just gotta try this to see for yourself…

This sounds amazing and I am really excited to try it. I am always excited about non-fat recipes, especially those made with veggies. I don’t have access to filtered ice nor fresh corn right now. Do you think I could use frozen corn and no ice? If so, what modifications in the measurements of the ingredients do you think would need to be made?

I *so* enjoyed this! I actually defrosted it a bit and turned it into a slushed “milk shake” and took it on a road trip, and it was *delish*. Tasted like vanilla cake batter!

If you don’t have access to fresh corn, you could make it with frozen corn if you’d like… tho my personal preference would be to just make something else because frozen corn is not only frozen but also blanched. It’s not “raw” or fresh by any stretch. Just be sure to get organic and select a “white sweet” variety rather than the large yellow-kerneled type.

You can also add raw cacao to this recipe… a couple tablespoons would make it nice and chocolatey… if you want your choco-fix. :-)

I wouldn’t make any modifications in the measurements if using frozen corn. Try with 1 cup less ice if you’d like.

Thanks Angela. Regarding the frozen corn, having researched the blanching issue, I have been told from our distributors that Woodstock Farms do not blanch their frozen produce, rather they flash freeze (quickly frozen at very low temperatures when ripe).

I can’t wait for fresh corn to be in season and to try this!
