“Meyer Lemon-Pineapple” Live Green Smoothie… with or without fresh greens!
With this one recipe you have a few options — with or without greens, super-lemony or just mild, and dessertly sweet or just sweetly average. Personally, I’m partial to With Greens, Super-Lemony, and Quite Sweet to off-set the lemon… but you pick your fave combo!
Any way you do it up, tho, it’s a great combination. Super way to take advantage of the yummy pineapples and Meyer lemons currently overflowing the grocery bins!
Recipe for: ”Meyer Lemon-Pineapple” Live Green Smoothie…
With or without fresh greens!
For the lemon juice, you will have the strongest flavor if you juice the Meyer lemon whole through a juicer. Today when I made this, however, I simply squeezed the juice out (into a glass first, so I could remove the pips, which would make the smoothie bitter if included). One lemon NOT juiced through a juicer makes for a very mild smoothie, but one lemon JUICED WHOLE significantly jacks up the lemon flavor.
Alternatively, add the juice of two Meyer lemons that have not been run through the juicer, if you want a stronger flavor.
- flesh from 1/4 fresh pineapple
- 1 Meyer lemon juiced whole through the juicer OR juice from 1 Meyer lemon (for mild flavor) OR juice from 2 Meyer lemons (for strong flavor)
- 1-2 bananas (2 large bananas makes a very sweet smoothie — add according to your taste and the size of your bananas)
- Optional: 1 cup fresh parsley or baby spinach
- spring water to 32 oz.
- 1-2 cups ice
Blend desired ingredients until smooth. Done! Enjoy…
