Bobby’s “Apple-Mojito” Raw Cocktail

My dear friend Bobby asked me to invent a Mojito recipe for him, so, Bobby… this one’s for you. :D

Made with fresh juices and the rum of your choice (a dark, spiced rum with a vanilla undertone in this case, but you can certainly use the lighter rum usually used in mojitos), this is a richly flavored mojito that is sweeter than what you’ll find in a bar setting.

Bobby showed up with a beautiful bouquet of fresh mint from his local farmer’s market. Looked like it had been picked from a private garden that very day! Now that makes for a tasty mojito!

Want a Virgin Cocktail? Just leave the rum out! Chilled and strained into a martini glass… will be delicious!

Recipe for: Bobby’s “Apple-Mojito” Raw Cocktail

  • 6 apples
  • juice from 3 limes
  • 1 cup fresh mint leaves
  • 2 cups of your favorite rum

Run the apples through the juicer and pour into glass pitcher and add the lime juice.. Add the mint leaves and “bruise” them against the side of the container, to release the oils in the leave and flavor the drink. Add the rum. You can let the mint leaves macerate in the mixture to infuse the mint flavor even more strongly.

When you’re ready to pour your drink out, add ice, stir to chill, and strain out into glass. Or, pour over ice, if that’s what you like.

And don’t forget that you can enjoy the beverage without alcohol! Just chill well and pour into a beautiful glass! [/private]

Hi Angela, if you make this one without rum what do you use as a substitute? can’t wait to try it :)

Do you mean, without alcohol entirely? In that case, a red tea brewed with vanilla would be *delicious* in this recipe! It would definitely approximate the vanilla/spice that was in the dark rum I used.

If you mean you don’t like rum and want to try a different kind of alcohol (although I don’t think that’s what you mean…), dark tequila, certainly. Or a vanilla vodka.
