Tomato Antipasto with Fresh Cherries & Raw Macadamia Pesto

Darkly sweet cherries add a mild flavor to this antipasto, and look beautifully like black olives on the plate. Normally it’s olives that give the saltiness in a dish like this, but here it’s the salted Raw Macadamia Pesto that does the trick… and you get to make sure it’s got plenty of the good salt that does your body great!
This colorful dish would make a brilliant little conversation piece at a raw pot luck… and yet it just takes minutes! It would also make a lovely side dish for a holiday dinner, special occasion or.. shoot… any old day.
If you don’t have great tomatoes, don’t even bother though. The idea of making this dish with chalky, grainy supermarket tomatoes might give me nightmares. No, no, no… juicy, sweet, luscious, love-apples…that’s what this dish needs. Now, you… go pick some up… quick… and surprise your family with this nice little dish at your next meal!
(And for what it’s worth…it went great with my glass of Shingleback Shiraz. Heh.)
