“Cooked Cereal” the Raw Vegan Way… for Breakfast or Dessert

If I had little kids, I know that some variation of this recipe would be a daily staple on the kitchen table.
This mild-flavored dish is sweet, creamy, and sooooo much healthier than cooked grains with milk. It’s chockfull of calcium from almonds, and essential fatty acids, protein, fiber (and many other good things…) from hemp seeds and macadamia nuts — with a daily apple to keep the doctor away. Fresh almond milk poured over top mixes with fresh almond pulp to give a texture not unlike good old Cream O’ Wheat.
It would also make for a comforting dessert for adults, or a nice light supper. Despite the dish involving a few different steps, it’s very quick to make.

Recipe for “Cooked Cereal” the Raw Vegan Way

Step One: Fresh Almond Milk

Make some fresh almond milk in your blender, and reserve the almond pulp to use in the cereal.
- 1 cup raw almonds (soaked if you have them, but un-soaked with do)
- 4 cups spring water
- 2 tablespoons raw honey (or another favorite natural sweetener)
- 1 teaspoon organic vanilla extract (or 1″ piece of vanilla bean)
- pinch quality salt (Himalayan Crystal salt over here…)
Blend well in the blender, then strain through a nut milk bag or cheesecloth into a pitcher. Squeeze moisture out of the almond pulp and set aside for the cereal mixture.
(If you don’t have a nut milk bag and want to make some almond milk today, cheesecloth is pretty easy to find at your local grocery or health food stores.)
Step Two: Make the “Cereal Grain” Mixture

- 1/3 cup fresh almond pulp
- 2 tablespoons hemp seeds
- 4 tablespoons raw macadamia nuts
- 1 tablespoon raw honey
- 1/8 teaspoon quality natural salt
- 1/4 teaspoon organic almond extract
- 1/2 teaspoon organic vanilla extract
Blend all ingredients well in the blender or food processor. It’s okay to leave some of the macadamia nuts chunky.
Step Three: Finishing the Dish

Cut up 2 apples in a bowl.
Crumble the cereal mixture over top. Sprinkle with Cinnamon, if you’d like.
Dish up some of the apples and cereal into a small bowl and pour fresh almond milk over top. Enjoy!
