Nut balls…cracks me up every time I hear that phrase, but… meh…that’s what these are. They’re not truffles — these are a combination of various nuts with goji berries and dates, covered with a crunchy raw chocolate glaze. They’re slightly sweet, slightly salty, small enough to just grab a few and have when you’re craving something crunchy-salty-chocolatey-sweet with a cup of tea or coffee. Just a couple pieces have the intense flavor and nutrition that can really satisfy without overeating.

Great snack for kids. Great snack to make with kids. Excellent for airplanes, for sticking in your bag when you hit the road. And super-fast to whip up. Hey… why don’t you have some sitting in your fridge right now? :D

Great nutrition can also make for great-tasting desserts, and this quick-to-prepare non-dairy shake made from nutrient-dense ingredients is proof. Fresh almond milk and raw cacao butter provide the creaminess, coconut palm sugar (or your own favorite natural sweetener) provides the sweetness, and vanilla beans and pecan add a heady fragrance and additional richness.

As for the nutrition, here… Almond milk is rich in assimilable calcium. Raw pecans are a great source of zinc and are well-known for their cholesterol-lowing ability. And raw cacao butter is a good source of essential fatty acids Omega 6 and monounsaturated Omega 9 (oleic acid).

In my kitchen, these are all staples, so to whip this up generally doesn’t require any special trip to the store. Keep vanilla beans and raw cacao butter in your own kitchen, and a good selection of nuts to choose from, and you’ll always have some version of this just a blenderful away!

The combined nutritional arsenal of broccoli, pineapple, and fresh turmeric root in this smoothie makes drinking this naturally creamy smoothie like resurrecting a health-protecting fortress.

Broccoli is well-known for its cancer-protecting (and some even say cancer-curing) ability. Turmeric root is highly regarded by both alternative health and the scientific community for its apparent anti-cancer, anti-inflammatory, and digestion-soothing potency. And the bromelain in pineapple is well-established as one way to help improve digestion and soothe stomach ailments.

The high amount of protein in the broccoli appears to be what provides the natural frothy-creaminess when used in smoothies, and the pineapple gives both a delicious sweetness and a nice “zing” to this refreshing drink. And you can add some raw honey if you want more sweetness and to jack up the anti-inflammatory quotient even higher!

Pasta Night. Big tradition, definitely in our house. And normally, “raw pasta” dishes just don’t cut it for me. But this one… really satisfies. It has a flavor combination that should please a lot of palates, even if they’ve never been into “raw” very much.

And if you’re not quite on the 100% Raw Train, you can add some toasted Ezekiel bread for a hearty, grounding, filling meal and make it really do the job. This is a dish not just for the raw food fans, but for meat-eating, BBQ-loving guys, and for kids, as well.

Transposed directly from the recipe I used for years for the cooked version, learned from Marcella Hazan, this sauce bursts with flavor, and takes only minutes to get on the table. It’s creamy, looks cheesy, doesn’t use nutritional yeast or any raw food “tricks”, is made from simple, common ingredients… and really, really tastes yummy. This recipe alone fueled myself and a hearty meat-eating man for a long night of dancing. :D

Darkly sweet cherries add a mild flavor to this antipasto, and look beautifully like black olives on the plate. Normally it’s olives that give the saltiness in a dish like this, but here it’s the salted Raw Macadamia Pesto that does the trick… and you get to make sure it’s got plenty of the good salt that does your body great!

This colorful dish would make a brilliant little conversation piece at a raw pot luck… and yet it just takes minutes! It would also make a lovely side dish for a holiday dinner, special occasion or.. shoot… any old day. :D

If you don’t have great tomatoes, don’t even bother though. The idea of making this dish with chalky, grainy supermarket tomatoes might give me nightmares. No, no, no… juicy, sweet, luscious, love-apples…that’s what this dish needs. Now, you… go pick some up… quick… and surprise your family with this nice little dish at your next meal!

(And for what it’s worth…it went great with my glass of Shingleback Shiraz. Heh.)

It is no secret to anyone who knows me well that my favorite dessert on the planet (even before a well-made cake) is the Greek dessert, Galaktobouriko. Made with a creamy semolina custard sandwiched between layers of phyllo dough, and then soaked in a distinctive syrup made with vanilla, lemon, orange blossom water and rose water, it is — for me — the ultimate dessert. Hardly “raw”, though. :D

This simple but utterly delicious dessert (or breakfast… or snack… or light dinner…heh) is made with perfectly ripe, juicy summer peaches and a creamy sauce that evokes the same exotic floral aroma and creaminess of the Galaktobouriko I grew up loving so much. Takes just minutes to prepare as well…

This dish, suitable for a filling breakfast or a cozy, comforting dessert, took all of 10 minutes to make… including the pumpkin seed milk from scratch and the photos! It’s quick, simple, easy, uses ingredients that are readily available in most supermarkets and are easy to keep on hand… and is sure to be a massive hit with kids any time of day!

You can substitute any of your favorite nuts or seeds for this milk — whatever you have on hand, such as almond, walnut, pecan, or hemp — but pumpkin seeds are a particular favorite of mine because A) they’re packed with nutrition, and B) they’re uber-cheap compared with other nuts & seeds. Be sure to get them raw and from the bulk section of your grocery store or health food shoppe.

There are just soooo may ways I can think of creating a raw vegan gyro, it’s easy to get overwhelmed. And I may have to eventually call this “Raw Vegan Gyro #1″ as I begin to bring out the other, more complex, perhaps “meatier” versions I’ve already envisioned creating.

But as I’ve received two request for raw gyros over the past week alone, I decided that the very first recipe I put out for a gyro should be both 1) quick and 2) easy to prepare from very simple ingredients. No dehydration of a raw vegan “pita bread”. No straining of cucumbers for an authentically thick tzatziki. No dehydration of some kind of “gyro meat”. Just simple ingredients and no fussy preparation. I guarantee you can have this dish on the table very quickly, any day of the week.

The challenge of creating a raw gyro recipe is three-fold:

  • One can’t utilize yogurt or any other dairy product to create the tzatziki (cucumber/garlic/yogurt sauce).
  • One must have some kind of “holder” of the gyro, such as the pita bread normally used.
  • And then there’s the seasoned meat which comprises the heart of the sandwich.

In addition, in Greece an additional ingredient is french fries, which adds so much in the way of texture and flavor. 

I’ve whipped this recipe up very quickly, while enjoying a glass of wine with a friend, with the ingredients depicted in the photo below, so you can see how simple my approach is. And what you get is something fresh, flavorful, messy/drippy (as any authentic gyro should ever be…), and truly grounding and satisfying enough to serve as a main meal.

Although there are a few different components to the dish, they are all extremely easy & quick to prepare. Just set out a few separate bowls, fill them up, and you’ll be done before you’ve finished that first glass of wine.
